The technique is the tradition: pinch off a piece, press a small hollow with your thumb, and scoop. Fufu’s natural partner is fumbwa, the thick ground-leaf and peanut stew, but it scoops pondu, madesu and sauces just as happily. If you have never eaten with your hands at a Congolese table, fufu is where the habit begins.
