Every Congolese gathering has that one plate everyone reaches for while the mains are still on the fire, and it is usually sambusas. Ours are filled with warmly spiced minced beef, folded into their classic triangle, and fried until the crust turns golden, flaky, and blistered. Crisp outside, savoury inside, gone in two bites.
