Chikwangue: the bread of the Congolese table.
Before there was cutlery, there was chikwangue. Also known as kwanga, this traditional cassava bread is smooth, dense and gently tangy, made from fermented cassava and cooked until firm. It arrives at your table the way it should: as a clean white log resting on a fresh banana leaf.

There is a technique to it, and it is joyful: tear off a piece with your fingers, press it lightly, and use it to scoop up pondu, fumbwa, or the juices from a plate of ntaba. Chikwangue does not compete with your stew; it carries it. For first-timers, it is the most authentic way to eat Congolese food; for those who grew up with it, it is simply home.
