Grilled Chicken with Miondo: charcoal fire meets tradition.
This is the plate that needs no explanation to anyone who knows Congolese food, and the one that converts everyone who does not. Chicken pieces grilled over charcoal until the skin turns golden with dark char marks and the meat stays juicy, served with miondo, the slender traditional cassava bread sticks, resting on a fresh banana leaf.
On the plate: Grilled Chicken with Miondo!
-
Charcoal-grilled chicken pieces with golden, smoky charred skin
-
A bundle of miondo, pale, tender cassava bread sticks on a banana leaf
-
Raw white onion rings, fresh tomato and pili-pili on the side
The way to eat it is the way it has always been eaten: tear a piece of miondo, press it lightly, and scoop up the juices from the chicken. Add raw onion and a touch of pili-pili if you like it loud. It is a complete, traditional plate, no rice required, though a side of Riz never hurt anyone.
Love the charcoal flavour? Our whole Grilled Fish comes off the same fire, and miondo is also available on its own as a side for any stew.
