Goat is the meat of celebration across Central Africa, and stew is its most comforting form. Ours simmers low and slow: chunks of goat on the bone in a rich tomato-based sauce, cooked until the meat is tender enough to pull with a spoon and the sauce turns deep, glossy and reddish-brown.
